These small osúchy, Slovak yeasted flatbreads made with whole wheat and all-purpose flour, are baked in the oven and served warm and crisp. The dough, made with two types of flour, milk, yeast, and butter, rises in a warm place for an hour. It then bakes in an oven preheated to 250°C (480°F) for only about ten minutes. Eat the flatbreads on their own rubbed with garlic, or serve them alongside soup or meat.

Instructions

Tip: tap a step to mark it as done.

  1. Crumble the yeast and stir it into 3 to 4 tbsp of lukewarm milk. Put both flours in a bowl, then add the yeast mixture, sugar, salt, butter, and remaining lukewarm milk.

  2. Knead into a smooth dough that no longer sticks to the sides of the bowl. If it is too stiff, add milk; if it is too loose, add flour. Cover with a kitchen towel and let rise in a warm place for 1 hour.

  3. Preheat the oven to 250°C (480°F). Turn the dough out onto a floured work surface and knead thoroughly.

  4. Divide the dough into 8 to 10 equal pieces and roll each into a small flatbread. Prick the flatbreads with a fork and arrange them on a baking sheet lined with parchment paper.

  5. Bake for 10 minutes until light brown and serve warm.

Tip: Place the baking sheet in the oven while it preheats, then transfer the flatbreads onto it along with the parchment paper. The hot baking sheet will immediately start cooking the bottoms, making them crisp.
