Pork tenderloin with creamy green onion sauce is a simple lunch made by gently simmering pieces of pork in a cream sauce. Cut the tenderloin into pieces 2–3 cm thick and brown them first, then sauté the onion and green onions in oil and add sour cream, butter, and heavy whipping cream. Simmer the meat in the sauce for about 30 minutes. Serve with potatoes, rice, or seasonal squash.

Instructions
Tip: tap a step to mark it as done.
- Cut the pork tenderloin into pieces 2–3 cm thick. Heat 25 ml of sunflower oil in a skillet and brown the meat on both sides.
- Remove the meat, pour the remaining oil into the skillet, and add the onion and green onions. Once the onion is translucent, stir in the sour cream, butter, salt, and pepper. Pour in the heavy whipping cream and stir to combine.
- Once the cream has warmed slightly, return the pork medallions to the skillet. Simmer over low heat for 30 minutes.
Tip: Reserve some of the chopped green onions and sprinkle them over the meat just before serving, as they would lose their color and aroma after half an hour of simmering in the sauce.
