This turquoise Sea foam cocktail is a refreshing summer drink with a color reminiscent of the sea. Blue curaçao gives it its turquoise hue. Shake the liqueur with apple juice, lime juice, and ice, then strain into a stemmed cocktail glass and top with chilled sparkling wine.
If you haven't made it to the seaside this year, this drink will at least bring its color to your glass. A slice of melon with the rind on is all you need for a garnish.

- Place the ice in a cocktail shaker, add the apple juice, liqueur, and lime juice, and mix well.
- Strain through a strainer into a stemmed cocktail glass and top with chilled sparkling wine.

Tip: Place the stemmed glass in the freezer for ten minutes to keep the drink cold longer. Pour the sparkling wine slowly down the inside of the glass to keep the foam from spilling over the rim.
