Spicy slonie žrádlo, literally “elephant food,” is a retro salad from the Czechoslovak era: ham salami, eggs, sour pickles, and onion are finely diced and tossed with a hot dressing of ketchup, mustard, oil, and vinegar. Unlike Parisian-style deli salad or salami and processed cheese spread, it contains neither mayonnaise nor cheese. It is made in a large batch, chilled to let the flavors develop, and spread on fresh bread or slices of a soft white loaf, for example for New Year's Eve.

Instructions

Tip: tap a step to mark it as done.

  1. Hard-boil the eggs

    12 min

Hard-boil the eggs for 10 minutes from the time the water begins to boil. Cool them in cold water and peel.

  2. Dice the ingredients

    15 min

Finely dice the salami, pickles, onion, and eggs and place in a bowl.

  3. Cook the dressing

    5 min

Combine the oil, ketchup, mustard, vinegar, sugar, Worcestershire sauce, salt, and pepper in a small saucepan. Bring to a boil, stirring constantly, and boil for 1 minute.

  4. Combine

    3 min

Pour the hot dressing over the salami, vegetables, and eggs and mix thoroughly.

  5. Chill

    2 hr

Let the salad cool, cover, and refrigerate for at least 2 hours, preferably overnight. Serve spread on fresh bread or slices of a soft white loaf.

Tip: The salami absorbs the dressing in the refrigerator, and the flavor becomes more pronounced overnight. You can replace the vinegar with 4 tbsp of pickle brine.
