Vegetable frittata with broccoli, garlic, and lemon is a quick breakfast for two that you can make even on a busy morning. Cook the onion in butter until soft, then add broccoli florets and bell pepper strips, followed shortly by garlic mixed with lemon juice and olive oil. Pour beaten eggs seasoned with salt and pepper over the vegetables. Once the eggs set, finish the frittata in the oven at 180 °C (350 °F). The whole preparation takes about a quarter of an hour.

Instructions

Beat the eggs with salt, pepper, and any additional seasonings to taste. Cut the broccoli into florets, slice the bell peppers into thin strips, and slice the onion into half-moons.
Chop the garlic and mix it with the lemon juice and olive oil. Heat a little oil with the butter in a skillet and cook the onion until softened. Add the broccoli and bell peppers and sauté for about one minute.
Add the garlic mixture to the skillet and pour in the eggs after 30 seconds. Once the eggs have set, remove the mixture from the skillet and set the oven to 180 °C (350 °F).
Bake the frittata in a small baking dish for seven minutes. Serve with vegetables.
Tip: If your skillet has a metal handle, you can finish the frittata directly in the skillet without transferring it to a baking dish. Use an oven mitt to handle it afterward.
