Chili pepper chocolate truffles pair sweet chocolate with spicy heat, a combination known since the Middle Ages. Melt the chocolate with butter over a water bath, add cream with chopped chili pepper, and bring the mixture to a boil. First, coat the cavities of a frozen mold with the mixture to create a firm shell, then fill them completely. These truffles make a lovely Valentine's Day gift.

Instructions
Tip: tap a step to mark it as done.
Melt the butter and chocolate, broken into pieces, in a bowl set over a water bath. Pour in the cream with the chopped chili pepper and bring the mixture to a boil.
Remove the prechilled chocolate mold from the freezer and fill each cavity with the chocolate mixture. Immediately pour the chocolate back out, then return the mold to the freezer briefly to form firm shells.
Fill the chilled mold again, this time leaving the chocolate in place, and let the truffles cool at room temperature.
Refrigerate the cooled truffles for at least half a day, then turn them out of the mold. Coat them in cocoa powder before serving.
Tip: Chili peppers vary greatly in heat, so add the chopped chili to the cream a little at a time, tasting as you go. Use two teaspoons to coat the truffles in cocoa powder, as they would melt in warm hands.
