These no-bake cocoa, date, and peanut truffles are Christmas treats with no added sugar, ready in 20 minutes. Dates provide the sweetness: soak them for ten minutes, then blend until smooth with Dutch-process cocoa, vanilla extract, dry-roasted peanuts, and sunflower seeds. Shape the mixture into balls.

Roll them in cocoa powder, shredded coconut, or ground nuts. They are also suitable for vegans and people avoiding gluten.

Tip: tap a step to mark it as done.

  1. Cut the dates into smaller pieces and place them in a food processor or blender with the remaining ingredients.
  2. Blend until smooth, then shape the mixture into balls.
  3. Roll the balls in Dutch-process cocoa powder, shredded coconut, or ground nuts. Store in an airtight container in the refrigerator.

Tip: Use unsalted peanuts, as salted peanuts would make the truffles too salty. If the mixture sticks to your palms while shaping, dampen your hands with cold water.
