No-bake walnut and date halva with honey and saffron is a skillet-made sweet that also fits a Christmas table. The base is flour toasted in melted butter for about ten minutes, then mixed with coarsely chopped walnuts and dates. Saffron-infused water with a tablespoon of honey, prepared ahead of time, flavors the mixture. This recipe makes 12 servings.

Instructions

- Place the saffron in a mug, pour boiling water over it, and add a tablespoon of honey. Do not stir; simply cover the mug with a small plate and set aside.
- Melt the butter in a skillet and stir in the flour.
- Toast the mixture over low heat for about 10 minutes, then add the coarsely chopped walnuts and cook for about 1 more minute.
- Add the finely chopped dates and cook briefly again.
- Finally, pour in the honey syrup, which will have turned amber by now, and stir everything into a smooth puree.
- Remove the mixture from the heat and spread it in a glass dish with a lid.
- Once the halva has cooled, cover it with the lid and refrigerate for about 2 hours.
- Cut the halva into small squares and serve.
Tip: Toast the flour over low heat, stirring constantly, until golden and nutty-smelling; burnt flour would give the halva a bitter taste.
