These tender, flourless quark-filled crepes have a batter made from eggs, milk, and cornstarch. Let the batter rest for 15 minutes, then cook the crepes on one side only in a skillet greased with oil or a slice of bacon. Fill them with quark, a fresh farmer's cheese, mixed with sugar and an egg, optionally adding poppy seeds or raisins, and fold or roll them as you normally would. They make a sweet breakfast for four; serve with cream, butter, and powdered sugar.

Instructions

Whisk the eggs with the sugar. Add the cornstarch and whisk until no lumps remain.
Pour in the milk and sunflower oil, stir, and let rest for 15 minutes.
Grease a skillet with sunflower oil or a slice of bacon and cook the crepes on one side only.
Prepare the filling: mix the quark with sugar and 1 egg, adding poppy seeds and raisins to taste if desired.
Fill the crepes and fold or roll them as you normally would.
Arrange the crepes in a baking pan or baking dish, spreading each layer with sour cream and melted butter.
Bake in an oven preheated to 180 °C (350 °F) for 10–15 minutes.
Make approximately 25 thin crepes from the batter.
Tip: The cornstarch quickly settles to the bottom of the batter, so stir it with a ladle before cooking each crepe.
