These oven-baked doughnuts with apricot jam are yeast doughnuts baked on a baking sheet instead of fried in oil. The dough, made with semi-coarse wheat flour, milk, butter, egg yolks, and a fresh yeast starter, rises until doubled in size. It is then rolled out to a thickness of 1.5 to 2 cm and cut into rounds with a glass. The doughnuts bake for 20 to 25 minutes at 190°C (375°F), are filled with apricot jam, and are dusted with powdered sugar. They are soft and tender, and although they differ from fried doughnuts, they have no oily smell and appeal to children, too.

Instructions

Tip: tap a step to mark it as done.

  1. Stir the yeast into 100 ml of the milk with a little of the sugar and let it stand until foamy.

  2. Combine the remaining ingredients, except the jam and powdered sugar, with the remaining milk and the yeast mixture. Let the dough rise in a warm place until doubled in size, then knead it briefly and let it rest a little longer.

  3. Turn the dough out onto a floured work surface, roll it out to a thickness of 1.5–2 cm, and cut out doughnuts with a glass.

  4. Transfer the doughnuts to a baking sheet lined with parchment paper, cover with a kitchen towel, and let rise for 20–25 minutes.

  5. Preheat the oven to 190°C (375°F). Use your finger to make an indentation in each doughnut and fill it with a teaspoon of jam.

  6. Bake until the doughnuts begin to brown.

Tip: The yeast starter is ready when it develops a foamy cap and increases in volume. If it stays smooth and does not foam, the yeast is probably no longer fresh and the doughnuts would not rise—use fresh yeast instead.
