Plum cake made with potato dough, cinnamon, and walnuts is an old-fashioned recipe familiar to earlier generations. The dough is made from raw grated potatoes, drained of their liquid, mixed with egg yolks, sugar, salt, and flour. It should be slightly thinner than the batter for podlesníky, traditional Slovak potato pancakes. Spread it in a buttered baking pan, top with plums, and sprinkle with cinnamon, ground walnuts, and sugar. Bake at 200 °C (400 °F).

Instructions

Tip: tap a step to mark it as done.

  1. Peel and rinse the potatoes, grate them into a bowl, and drain off the liquid they release. Stir in the egg yolks, salt, and sugar.
  2. Finally, stir in enough flour to make a dough slightly thinner than traditional potato pancake batter.
  3. Grease a baking pan with butter and spread the dough in it.
  4. Drizzle the dough with melted butter, arrange the halved plums on top, and sprinkle with cinnamon and chopped walnuts.
  5. Bake in an oven preheated to 200 °C (400 °F) for about half an hour. While the cake is still hot, dust generously with sifted powdered sugar.

Tip: Spread the dough in a thin layer so the potatoes cook through in the center. Serve the cake while still warm, as cold potato dough is firmer and less tender.
