This shredded potato casserole with frankfurters and cheese is a hearty one-dish dinner. Mix shredded potatoes with egg yolks, garlic, cheese, and sour cream, then fold in beaten egg whites to give the casserole a fluffy texture. Pour the mixture over whole spicy frankfurters and bake for 40 minutes at 180 °C (350 °F). Serve with fresh vegetables and parsley.

Wash, peel, and finely grate the potatoes. Separate the eggs into whites and yolks, then beat the whites with a pinch of salt until stiff peaks form. Season the yolks with pepper, salt, and crushed garlic. Finely grate the cheese and divide it into two portions.
Mix the first portion of cheese with the egg yolks, then add the grated potatoes, stirring constantly. Stir in the sour cream, then gently fold in the beaten egg whites.
Arrange the whole frankfurters in the bottom of a baking dish and pour the potato mixture over them. Grate the remaining cheese over the top and bake in an oven preheated to 180 °C (350 °F) for 40 minutes. Serve hot with fresh vegetables, sprinkled with parsley.
Tip: Drain any liquid released by the shredded potatoes before mixing; otherwise, it will thin the beaten egg whites and cause the casserole to collapse. At the end of baking, insert a knife into the center to check that the potatoes are tender.
