Rice pudding with eggs and cocoa is a creamy, sweet rice dish that many remember from childhood. The rice is first cooked in salted water with butter, then slowly simmered in milk once the water has evaporated. Egg yolks beaten with sugar and egg whites whipped with vanilla sugar give it a delicate, fluffy texture. Sprinkle the finished pudding with cocoa powder, cinnamon, or powdered cocoa drink mix.

Instructions
Tip: tap a step to mark it as done.
Rinse the rice and cook it in salted water with the butter.
Once the water has evaporated, pour in the milk and continue cooking the rice slowly.
Meanwhile, beat the egg yolks with the sugar. In a separate bowl, beat the egg whites with the vanilla sugar until stiff peaks form.
Stir the egg yolk mixture into the tender rice. Remove the pot from the heat and fold the beaten egg whites into the hot rice.
Mix until combined and serve sprinkled with grated chocolate, Granko powdered cocoa drink mix, cocoa powder, or cinnamon.
Tip: Round-grain rice works best for rice pudding because it releases more starch, making the pudding creamier. Stir frequently while it simmers in the milk to keep it from sticking.
