Make this homemade cheese spread with 500 g of quark (farmer's cheese), an egg, butter, and a few common ingredients. Mix the quark with the egg, baking soda, and melted butter, then melt it over a water bath until smooth and elastic. The baking soda helps the quark melt rather than stay firm.
Vary the basic version by adding herbs, horseradish, or chopped ham. Store the cooled cheese in a covered container in the refrigerator.

Fill a small saucepan halfway with water, cover, and bring to a boil. Meanwhile, thoroughly mix the quark with the egg and baking soda in a metal bowl. Add the melted butter and stir until the mixture is smooth and doughlike.
The baking soda is important because it helps the quark melt and makes the cheese elastic; without it, the cheese would remain firm.
Set the bowl over the saucepan of boiling water, making sure the bottom does not touch the water. Heat the quark mixture over the steam until completely smooth and elastic. Remove the bowl from the heat, season the cheese with salt and pepper to taste, and add herbs, horseradish, or ham if desired.
Transfer the cheese to a plastic or glass container with a lid, let cool, and store in the refrigerator.
Tip: Measure the baking soda with a level teaspoon, as too much will give the cheese a soapy taste. Pour it into the container while still hot and fluid; once cooled, it firms up and is difficult to smooth out.
