Racuchy are Polish apple pancakes made with a simple batter mixed with grated apples. Whisk an egg with milk and a little oil, add flour mixed with baking powder and salt, then stir in the apples after squeezing out the excess juice with your hands. Fry the pancakes in a skillet and dust them with powdered sugar before serving. They are filling and work well for breakfast or a sweet dinner.

Instructions
Tip: tap a step to mark it as done.
In a bowl, whisk the egg with the milk and add a little oil. In another bowl, combine the measured flour with the baking powder and salt.
Stir the flour mixture into the liquid mixture until no lumps remain.
Finally, squeeze the excess juice from the grated apples with your hands, then stir the apples into the batter.
Cover the bowl with a kitchen towel and let the batter rest for about 30 minutes. Then spoon the batter into hot oil to form small pancakes and fry on both sides until golden brown.
Drain the pancakes on a paper towel and dust with powdered sugar before serving.
Tip: Grate the apples coarsely—finely grated apples release too much juice, are difficult to squeeze dry, and disappear into the pancakes.
