This savory Niva cheese cake with olives and walnuts is a cold appetizer shaped like a small cake, with cheese in place of cake layers. Let a whole piece of Niva, a Czech blue cheese, soften, then slice it horizontally and fill it with a mixture of black olives, chopped eggs, carrots, walnuts, herbs, and mayonnaise. Decorate the sides with the remaining herbs and refrigerate overnight to let the flavors meld. You can substitute another cheese for the Niva according to your taste and availability.

Unwrap the cheese and let it soften at room temperature for 30 minutes. Place the olives, peeled and coarsely chopped eggs, chopped carrots, and 2/3 of the chopped walnuts in a bowl.
Season with salt and pepper, add the chili flakes, and mix thoroughly. Stir in 2/3 of the finely chopped herbs and the mayonnaise.
Slice the cheese horizontally into two layers. Spread the filling over the bottom layer, cover with the top layer, and press down gently. Coat the sides of the cheese with the remaining herbs and refrigerate overnight to let the flavors meld.
Garnish the cheese with the remaining walnuts before serving.
Tip: Slice the Niva horizontally using a taut thread to keep the crumbly cheese from breaking as it might under a knife. Drain the olives thoroughly before adding them to the filling, or it will become runny and leak out from between the cheese layers.
