These mini yeast-dough pizzas are made in an unusual way: spread the whole sheet of dough with tomato paste, add cherry tomato slices, ham, and cheese, then cut out small pizzas with a glass.
The dough makes two pizzas about 23 cm in diameter. It can also rise overnight in the refrigerator or be frozen.

Make the dough
Add the sugar and yeast to the lukewarm water and let stand until foamy. Pour into the flour with the butter and salt, then knead on a work surface until the dough is soft and no longer sticky. Let rise for about 1 hour, or a little less.
Top the dough
Roll the dough into a thin circle and spread with tomato paste or ketchup. Arrange cherry tomato slices on top, then place pieces of ham the same size as the tomato slices over them. Sprinkle with grated cheese, pizza seasoning, and herbs to taste.
Cut out the pizzas
Use a glass to cut out small pizzas. Press down the edges and brush them with beaten egg.
Bake
Bake at 190 °C (375 °F) for about 15–20 minutes, until golden.
Tip: Let the dough rise overnight in the refrigerator if desired. To freeze it, roll it into flat rounds, wrap each one in plastic wrap, and place in the freezer.
Tip: Arrange the tomato slices in even rows, spacing them a glass-width apart so each pizza has one in the center. Cut up the topped dough scraps and bake them with the pizzas.
