French onion soup is a simple onion soup served with toasted bread and melted cheese. Six onions, cut into strips, are sautéed in lard, dusted with flour and sweet paprika, and covered with water. Cook the soup only until the onions are almost tender; do not let them fall apart. Add triangles of bread toasted in butter to each bowl, sprinkle with grated cheese, and briefly broil at 210 °C (410 °F).

Instructions

Tip: tap a step to mark it as done.

  1. Cut the onions into strips and sauté them in the lard until translucent. Dust with flour, add the paprika, and sauté briefly. Pour in 1.5 l water and season lightly with salt and pepper.

  2. Cook the soup until the onions are about 3/4 cooked; do not let them fall apart. Season to taste with salt and ground black pepper.

  3. Coarsely grate the cheese and toast the bread in a little butter until golden brown. Ladle 1 serving of soup into a bowl and add the toast, cut in 1/2 diagonally into triangles. Sprinkle with 1 handful of cheese and broil in an oven preheated to 210 °C (410 °F), using top heat only, until the cheese is melted and golden.

Tip: Slice the onions lengthwise, from root to tip, to help the strips hold their shape during cooking. Use oven-safe plates or bowls for broiling and place them on a baking sheet.
